Anyone else have cabin fever yet? I know I’m going stir crazy for sure! I’m not normally the baking “type”, but last week I got the itch to make cookies. My sister has the best monster cookie recipe- they’re chewy, soft, and just the right size. So we mixed up a batch and I just have to share the recipe with all of you!
INGREDIENTS FOR CHEWY MONSTER COOKIES
(MAKES 9 DOZEN COOKIES- I BAKED 5 DOZEN FRESH, AND FROZE 4 DOZEN IN PRE-MADE COOKIE BALLS SO I CAN POP THEM IN THE OVEN LATER) This works great for during harvest- make sure you check out more harvest meal ideas here.
- 6 eggs
- 2 sticks of butter
- 2 cups sugar
- 1 1/8 cup brown sugar
- 3 cups peanut butter
- 9 cups quick oats
- 1/2 TBSP karo syrup
- 4 tsp baking soda
- 1/2 TBSP vanilla
- 1 pkg chocolate chips
- 1 large bag M&M’s
DIRECTIONS
- Preheat oven to 350 F
- Mix eggs, softened butter, and sugars.
- Add peanut butter, oatmeal, karo syrup, baking soda & vanilla.
- Mix in M&M’s and chocolate chips.
- Use an ice cream scoop and place cookies on a cooking stone
- Bake at 350 F for EXACTLY 12 minutes and you’ll have the perfect chewy monster cookie!
